If you are only at risk of diabetes, what changes are you making?
What were your results, and do you need to lose any weight?
My initial hba1c (6 weeks ago) was 45 so I am ‘pre-diabetic’ and I have been following a low carb diet since but have made a few boo-boos along the way 😳. I can’t seem to manage rice or bread at all, potatoes and pasta are ok if I limit the quantity. I have lost 10lb so far (now 12st 3lb at 5’6”)
The chicken terrine would be second choice, though picking out the apricots.@Drummer I’m not a fan of salmon, I was going to go for the roast (it’s not really Xmas without a roast turkey dinner!) but wasn’t sure about the rest. Was thinking cheese without crackers might be the only option for pudding.
Would the sorbet be high in sugar?

My thoughts are that I'll take a day off when my diabetes does - I don't worry about it in the least - I know that I have got diabetes beaten, so every day I make sure it knows that it has simply not got a hope.
Sorbet is probably going to be loads of sugar - the normal level of sweetening is far too high for me these days so I'd not bother - it would spoil things for me to have a sickly sweet dessert.
