I've came across a nice sounding recipe on the internet for spinach squares which i would like to make to take for my lunch at work but apart from one ingredient which requires 125g butter, i would like to replace this. What can i replace the butter with?

Strictly speaking you could use any butter substitute, but why would you want to? Butter is a lovely, natural product with no nasty harmful trans-fats and 125g is a very small amount. The little bit of fat will slow absorption of the food too. Can you give a link to the recipe please, sounds nice.

I must admit, I used to get Olive-based spreads but missed butter, so now where the taste is important I have butter. Toast just isn't the same without it! Before I was putting jam on my toast, now I don't need the jam for flavour, just have the butter. As long as everything isn't dripping in it, I think it's fine in moderation 🙂

Yes I found it http://allrecipes.co.uk/recipe/23886/spinach-squares.aspx From a diabetic point of view I'd be more worried about the 120g flour than the butter as flour is carb which raises BG. I might try it substituting about 100g ground almonds instead. Will let you know if I make it!
