What sort of things does everyone eat at lunch?

Hi everyone...

I've spent the last 2 weeks trying to be a better diabetic and testing more etc. I've now started looking a CP ready for when I start a DAFNE course in a few weeks....and am fast realising that eating bread is BAAAAAD! lol now I know the new thinking is 'you can eat anything, so long as you inject for it' which is great to have the flexibility but I would like to reduce the amount I'm injecting.

I work in an office and am trying to think of new things to eat for lunch.... but it needs to contain carbs or I am not full up lol and I don't like fruit, veg or salad!! (great for a diabetic!!)

I just wondered what you all ate, and maybe I can pick up some wiser D choices 🙂

Hi Katie, not all bread is bad - have you tried Burgen? It allowed me to reduce my insulin from 19 to 11 units because it has less carbs than normal bread and is low GI. Unfortunately I bulk out my meals with lots of salad so can really help. Is there really no salad or veg you do like because it would really help you if you found something you could have. To fill you up you also need something high in protein - I usually have cheese, eggs or tuna with a salad and add seeds.
 
I just finished a sarnie with wholegrain bread and Coronation Chicken salad (I was good and picked out the sultanas). I had a cup of tea with it and am now working my way through a bottle of water and waiting for it to stop raining so I can hit Tescos without getting soaked.
 
I don't inject, but sometimes think it would give me a bit more flexibility. I am trying to improve my diet.

Today I had a cheese sandwich and some mandarins.

the key here is SEEDS I think, received wisdom is that bread with 'bits' in is absorbed more slowly (ie low GI) and therefore doesn't give such a big spike. Burgen bread has no less carbohydrate than any other bread but it does have lots of bits! Different people react differently to bread though, if you check your BG an hour after eating you will see whether the bread is having a bad effect. I like John West Skippers in Tomato Sauce in my sandwiches - all that good omega 3!
 
Recently I've been having soft boiled eggs and toast soldiers (Burgen bread), which probably isn't practical if you are at work! Other things I have always involve bread, but as has been mentioned, Burgen seems to be fine for me. I have cheese, ham, salmon sanwiches or sometimes beans on toast or soup. Soup might be a good idea as you could take a flask into work with you and if you make your own you will know exactly what has gone into it! 🙂

When i get in from work , i tend to hve 3 ryvitas with various toppings s im trying to steer clear of bread, and with all the different varieties of ryvitas you dont get fed up 😉

Hi, I used to eat seeded bread but it must have been quite thick or something and was higher in carbs than the burgen I have now. What type of seeded bread do you have? It would be nice to try a different bread for a change :D
 
Hi although I dont inject insulin I find keeping a good selection in meals in mind is a good idea,I get bored with ham,tuna chicken etc etc but I have recently got into prawns do you like them? Another idea instead of break is oatcakes there very nice and filling too.Just carrying on from heasnadford I know John West do these things in tins that are flavoured ones medditerrean but cant remember the rest there nice for a little snack or put on top of some crackerbread x
 
Today I had:

Chips, onions rings, chicken dippers, baked beans, ketchup and a snickers ice-cream afterwards.

Probably don't copy my meals if you're wanting to reduce your insulin 😛

On a serious note, you don't like fruit veg or salad? So that whole 5 a day thing is completely passing you by then. I don't eat my five a day, but I love my fruit veg and salad.

As the saying goes "Eat the rainbow". Granted my lunch for today didn't have much colour in it but my evening meal will. If you don't like any fruit veg or salad, you're not going to get much colour in your meals at all 😱
 
I tend to have a burgen sarnie and all or three quarters of a piece of fruit.

If bread is no good could you get all organised and take in a smallish brown basmati rice salad, or wholemeal pasta salad? (not sure how you cope with either of those having said that!)

Low carb low fat yoghurts get good reviews around here too as a lunch component

Oh.. and of course protein will fill you up more than carbs (witness 'fuller for longer' ranges, which have fewer carbs, more protein)

I don't comprehend, I'm sorry, how anyone can actually stay alive without eating at least some fruit and veg. There are all sorts of stuff that the body needs in em - trace elements and minerals and vitamins and stuff - that we just can't get from anywhere else. Not to mention fibre ....... 😱

And - well, you disguise/enhance stuff with other stuff ! eg the humble white cabbage. Pretty boring really, cooked. So cook it (pref by steaming it) and drain it, then toss in a generous knob of butter and an equally generous amount of ground black pepper, turn it thoroughly in the saucepan to coat the lot. Drool.

I think I actually prescribe a more adventurous cook!

On the whole DAFNE course, I completed mine in june and havent looked back. It really does give you more flexibility and the ability to change you insulin based on excersise really helps. Hope you enjoy it!!

the Burgen bread sounds like it's worth a try, defo going to give that one a go! I like all bread so it doesn't really matter what type it is. I was just getting concerned about how much bread I eat and probably how unhealthy it is!

Re: the fruit, veg and salad.....I didn't say I didn't eat it, just that I don't like it! I just didn't want to waste people's time by them coming back and saying all these probably lovely sounding dishes that I just wouldn't eat 🙂 I eat veg every day with my evening meal. I hate it, but I do it. I sometimes eat salad as well. I know it sounds silly, but trust me, I more than anyone wished I liked it all and that I could sit down and eat a salad for lunch or something. It's not from lack of trying....I just don't like the taste :(

thank you 🙂 I can't wait to go on the DAFNE course...I'm actually getting excited about it!! My course is called BERTIE though (can't remember exactly what it stands for) but it's essentially DAFNE run by my diabetes centre, and rather than doing it all in one week, I'm doing every Friday for 4 weeks which i think is great as I'll get to learn, go away and practice, and then go back.

No doubt I will be updating you all about it as I go!! :D

Actually burgen bread and vogel bread DOES have fewer carbs than other sliced bread, my four slices for lunch = 48g carb compared with sliced white usually between 70 and 88g (depending on brand) A big difference for my carb ratio (9.6 units compared to 17.6 units).

My lunch today is a fancy stuffed chicken breast (from Waitrose) salad leaves, handful of cherry tomatoes, mayo, peach, Scottish Raspberry yoghurt and a twix finger 🙂 83g carb total
