With pancakes I was brought up on a sugar and lemon juice fill, since then I have tried maple syrup, raspberries and cream, gooseberries,
But given the diabetes angle what goes well with pancakes?
how about adding oatmeal or almond extract or nutmeg?

I could imagine trying to fill cold pancakes with something like cream and berries, but I don't think it would work. Perhaps a lower GI sugar?
You could try lemon juice and Splenda or one of the other sugar substitutes, if you must have pancakes! Are you not reducing your carb intake?

I HAVE NEVER THOUGHT OF ADDING OATMEAL TO THE MIX OR NUTMEG WILL HAVE TO GIVE IT A TRY I THINK THAT WE TRIED ALMOND BUT NOT SURE
I kinda hsitate to suggest this, hope Northie doesn't take a fence, but here goes anyway.
There are shedloads of low-carb high satisfaction recipes (though not necessarily low cal, low fat or low anything else) over at www.diabetes-support.org.uk and one of them is a pancake recipe made with ground almonds.
They make small pancakes, not unlike a drop-scone and they can easily be eaten with berries and cream ....scrummy! But a 'crepe' type pancake, they ain't.
