Bored, as a board thing eating chicken and fish. ...decided to go a wee bit Italian with tuna and white bean salad with courgetti spaghetti with mushrooms and a wee bit of pesto. If I take it easy on the beans it should be fairly low carb 🙂 Fingers crossed x

Can you make carrot spaghetti or would the carb content be too high, got one of those french julienne peeler things for making carrot and celeriac salad so I have the technology!
 
I went rogue this evening and had wholemeal spaghetti and some chocolate. I have been really good this last month but I am really craving my old favourite foods:( Funnily enough carrot spaghetti wasn't on my list but I'll give it a go🙂

Learning like a newbie.... I have a couple of days of good readings and think this means I can up the carbs a little,,, not so:(

Low carb edamame pasta with mushrooms and pesto.... more than edible - success at last!

13 carbs per 100g. Cooked 50g - even better.

If you like an actual Italian low carb food with pesto, you could try "tomino al pesto"
This is the tomino: https://www.nifeislife.com/tomino-boscaiolo-from-piedmont-approx-100g-p-599.html - it's a fresh cow cheese in this case with a tiny crust. Like the French St.Marcelin.

Cut them in 4 part and put each part inside a piece of oven paper. Put the pesto over the cheese and close the paper. Heat for 8 min@200 C in an oven and serve hot.

In Italy pesto is used normally alone, having pesto and mushrooms is not a common dish, like meatball pasta. You could find meatball pasta in central Italy, albeit the meatballs are smaller, but in north Italy is really uncommon.
 
This is what I'll be eating later Ruby. Never tried it before but with 12g carbs (without the bone) I fancied chancing it. Serving it with broccoli cauli peas and 2 baby new potatoes.

Edit: It took too long to thaw so I compromised and had 3 scrambled eggs on wholemeal toast and had the hock ham for Sunday's dinner!

Sorry to report that my edamame substitute pasta was a bit of a disaster. Tasted fine when eating it but left a horrible bitter taster for hours after...

I'm new. How do you make courgetti spaghetti please?
 
  1. Cut lengthwise slices from courgette using a vegetable peeler. Turn courgette over and continue 'peeling' until all the is in long strips; discarding any seeds. ...
  2. Heat olive oil in a skillet over medium heat; cook and stir in the spaghetti for about a 1 minute.
... or do what I did - buy it from testco🙂
