Hi all,

Normally I buy small, very green bananas, they are good for warding off low sugars, especially in my kit bag. However my daughter did the shopping and got huge yellow ones, I can't justify the insulin and don't like them too ripe, its the only food I am fussy about.
Now they are past ripe and normally I would have low carb banana pancakes (banana, egg, baking power, vanilla) but I don't fancy them.

Anyone have a simple, low fat recipe for bananas?
Can include carbs, don't mind baking.

Thanks 🙂

Cut up the skins and put them in your house plants as natural fertiliser (Peace Lilies especially like them). Sorry, no recipes, I haven't bought bananas for years as they spike me terribly so I beg the skins from a neighbour!

Mush them up and freeze them.
If you only need small amounts at a time, freeze them in ice cube containers so you can defrost (or eat like min icecream) for your pancakes.
Alternatively, you could bake banana loaf and freeze it in small slices.

Banana bread/loaf or freeze them as @helli suggested. I’d go with the banana loaf personally!

This one is simple. I miss out the drizzle bit:

I slice it when it’s cool then freeze some individual slices.

I’ve also made something similar to these (mine used half a banana for each one):

They are :D Frozen bananas can make a kind of ice cream, often known as Nice Cream, eg here:

Cut them into 1/3rds or 1/4s and freeze them, then make custard or ice cream and include them in the mix.
At school bananas were provided for the staff rooms but the cook used to liberate them for his desserts.
