i have a pack of pre chopped veg in fridge and thought i might make some vegetable soup to use it up Anyone got a simple recipe please

I dont cook much but made a spicy pumkin soup the other night, just diced pumpkin, tomatoes and onions........mixed in with 2 pints of veg stock, simmerd for 30 mins, should be similar to that process........just get some stock.....
 
Chop onion and garlic together and fry with a tiny bit of oil. Then add a stock cube and a pint of hot water. Add veg and you have your soup. You could also add a tin of tomatoes or some noodles at the last minute to help fill it out.🙂Bev
 
I just put stock cubes veg a few herbs and when its done make it thick with the hand held blender. Grandkids wont eat veg but they love grandmas home made soup I tell them its pork and potato soup and nothing else. And I had to munch it up together because there was not enough pork for everybody to get some. Thy dont know its only veg :D
 
My favourite.
Any type of veg you have in, and red pepper, lentils ( a few), stock, tin tomatoes, and chilli (it gives it a good nose running kick!) Lovely.
Tend to make a pan and take for lunch each day.
 
Thanks guys am going to make this soup this afternoon am looking forward to it. Its only since discovering this site that I have really got into eating healthy and cooking for myself. Will let you know how it goes

made soup today and its been simmering away all day in slow cooker. Just had some and its realy yummy
