Unusual Blood Sugar Spike after meal

Hi,
I am still new to carb counting so bear with; last night I ate a homemade Prawn curry (Tinned tomatoes, veg, curry paste and prawns- served with a tortilla). I worked out the carbs at about 37 g and injected accordingly; I was 7.3 before the meal- shot up to 11.8 afterward. No idea what caused this; the fat in the meal wasn’t too high either. Any ideas?
 
How long after did you test and what prompted you to test afterwards - did you feel unwell? It’s normal for blood sugar to go up after a meal, fast acting insulin takes 3-5hours depending which you use, to finish working to bring your blood sugar down.
 
I felt normal. My diabetes team told me to check 2 hours after I eat; although based on what my dietician said (about how long the insulin takes to work) I’m not sure if I should just leave it more like 4 hours. By bedtime, I was back to a more reasonable 8.8 and then back to 6.2 by 3 am. So perhaps I’m worrying about the 2 hour post meal spikes unnecessarily
 
The 8.8 and 6.2 after the insulin had finished, from a 7.3 start, mean the dose of fast acting was about right to cover the meal you had.
