Hi All, I am new here but was diagnosed 18 months ago. Type 2 and on Metformin slow release. Not coping with the warm weather in the UK at the moment. Any tips?
 
Ice lollies made with no sugar squash, chilled cream whipped and mixed with finely chopped strawberries, freeze for a bout half an hour - quiche made with a low carb crust, or custard tart made with real custard, well chilled.
 
Custard tarts. My absolute favourite. A 4-pack had no chance in our house but those days are gone, never to return.

Like the sound of chilled cream and chopped strawberries though. Might give that a try.

There is no need to deprive yourself of custard tarts - you just need to make them yourself - don't forget the nutmeg.
I take various low carb dishes to social gatherings and set them on the table, go to take off my coat and the dishes are empty by the time I get back, more often than not. On some occasions they have already been washed up.
 
@Drummer.... what do you make the pastry with?
 
coconut flour and ground almonds, with warm butter whisked in then lightly pressed into the tin to make a thin base or case.
Not really pastry but it makes an outer layer. Allow the custard to cool to barely warm before pouring in, then move to the fridge.
 
Thanks @Drummer I need to source some coconut flour by the sound of things.
