TYpe 1 diet-no carbs and no fruit recipe ideas!

Has she been confirmed as Type 1 or is it gestational diabetes?
It does seem surprising that if she is having insulin that the instruction was for no carbs.
 
You wife should be receiving very regular monitoring by her obstetric team and be offered various tests on a more frequent basis than if non diabetic. Especially if she is having insulin you should have hypo treatment available at all times. The no carbs advice is worrying in that context.
Does she have access to an obstetric diabetes clinic as some hospitals run these? as that might help to reassure her about the advice.
