Turning vegan later in life as a diabetic

Anybody tried it? I have a good friend who just happens to be a vegan and a GP who tells me it would be great for me. I am keen to try as is the wife so we have decided on a vegan january. The problem is that all the nice looking recipes look carb heavy and I'm wondering if the benefits of a much healthier diet is worth the extra carbs or do I have it wrong?
 
I am a vegetarian but i eat some vegan meals i found it a bit of trial and error i go on to supermarkets reciepe pages and google vegetarian or vegan meals and look in charity shops for cook books or get some books out of the libary . There are loads of reciepes that are low carbs eg i have a lovely vegan sausage and lentils meal which you can have with veg. lentil bolonaise with spirilised veg rather than pasta. Quorn does a vegan range and so does tesco. My son loves Quorn vegan fishless fingers what i did was an online supermarket shop to find out what range of food they offer for vegans etc .
 
I'd hardly call lentils 'low carb' - they may well be low GI but if food is too low GI it's difficult to sort out the dose of insulin and the timing thereof required - on a pump you don't have any 'long acting' insulin in your body, only fast-acting.

I need a fair few of my carbs to get there after 10 minutes since my pre-meal jab with the majority of them arriving in the next two/two and a half hours and then tail off over the next 90 minutes same as the insulin does. Foods may vary in how long they take to get into the bloodstream - but the insulin doesn't - except when the weather's red hot.
