Turkish Food - odd highs

I’ve noticed that Turkish food tends to send my sugars sky high. On the surface the food is quite low carb if you avoid the bread and stick to a bit of rice (side note, I eat way less rice with Turkish than say...risotto) but my estimates for the carbs are way below what I need. Does anyone know what’s in the food to do that?
 
Hi @MaxwellMontes - to reiterate what @Billy Bob asks, what dish specifically? Its hard to give info/advice if we dont know the ingredients. Im afraid I dont have much general knowledge about typical Turkish fare. Although i would say - rice/bread is a BIG no no for me in any amount other than a couple of table spoon fulls. Regardless of brown or white. But then I dont take meds, just controlling things with diet at the mo!
 
rice is not really a Turkish staple,bulgar wheat is.

it could be you are not eating rice,which is fairly low in calorific content
but eating bulgar cracked wheat which has a much higher calorific content,looks similar,tastes similar.
 
I have an Arabic restaurant nearby. Not sure how it compares to Turkish but a chicken and vegetable tangine with rice works out well.
 
I got these books for Christmas, though I must admit that I have yet to make anything from them, but they look interesting and useful.
They're not exactly Turkish, but close
Obviously some of the pastries and similar major carbohydrate recipes are out, but I'm sure you could give the others an appropriate tweak where necessary

I have always found Amazon's Used books to be good value for money
