I made these treats !
Medjool Dates stuffed with sugar free no palm oil peanut butter and 88% melted dark chocolate with brazils / Hazelnuts.. diabetic treats?

Newly diagnosed Type2
New diet & health regime- no carbs and no processed or added sugar .

Since being diagnosed with what my doctors classed as extreme diabetes 110 or 19.0 A1C
And very high cholesterol I have joined the gym and am working hard on my diet and my health however I have found my sugar levels dipping when i exercise so I have decided to add some carbs to my diet in the mornings (overnight oats with blueberries and raspberries with some chia seeds and peanut butter ..

As I get the odd graving for snacks due to lack of carbs I find myself searching for a snack during the day - avocado -olives - wanting a sweet or a Chocolate Hob knob or something sugary - so I found Medjool dates don’t spike my sugars (Libre2) analytics.

So i decided to make these for pre gym workouts and for when I have a dip or fancy a treat.

They look delicious, unfortunately one would not be enough for me, more like 1/2 dozen. Two hours later I would find and out the damage. Best for me not to go even near those beauties. Sigh

Two Medjool dates have around 26 milligrams (mg) of magnesium and can help you reach your recommended daily allowance. Those with diabetes often have low levels of magnesium, and eating dates can help regulate your blood sugar.
 
@Dalsap - re the dates and GI. If you dig around you will find that glycaemic index is a bit of a nebulous concept. Lots of claims are made about things having a "low glycaemic index" but they are very hard to substantiate. It seems to me that it is mostly used as a try to get out of jail card by marketeers wanting to make people believe that their carby sweet stuff is better than everybody elses carby sweet stuff. Treat any GI claims with caution is my view.

The simple thing to do is to test before and after eating some and see what the effect they have. Some might tolerate quite a few, some none at all. Find out how they work for you.

PS...you quite clearly have some skills as a confectioner!
 
They look delicious, but like @Sharron1 , I would find it difficult to stop at one. Maybe I should buy a food safe and give husband the key 😱:rofl:

I wouldn't eat without testing your blood glucose reaction, they are 64g of carbs per 100g.
 
Another vote to be cautious about low GI claims for what are carb rich foods. Porridge is the classic case. Lives up to it's low GI/slow release reputation with some people and acts like rocket fuel for others like me. Even the jumbo steel cut oats start hitting my blood stream after 10 mins.

I use dates when my levels are low but not quite hypo. One Medool date is about 8g carbs without the chocolate and works in about 15mins for me, so not much slower than jelly babies. .

If these treats work for you (testing BG before and after is the key to finding out) and you can limit yourself to just one every now and then (like others, I would struggle to limit myself to just one) and fits into your carb allowance for the day, then great.

They look absolutely beautiful and I very much hope they work for you and your digestive system and your diabetes!
 
I could eat two and then not have to think about carbs for the rest of the day, but I don't think it would be all that sensible for me to do that.
