1L of vegetable (or chicken) stock
2 or 3 tsp miso paste
generous handful of fried shiitake mushrooms (or whatever you prefer)
100g of silken tofu, cubed
75g (dry weight) udon noodles (or any other kind if you have them)
Add all ingredients and simmer for 7 or 8 minutes until noodles are cooked,
Makes four portions of about 125 Cal and 20g of carbs.
It is very warming and filling for a light soup.
It is also delicious with an egg cracked into it when serving and stirred for a couple of
minutes to poach the egg. I like wasabi peas in mine too.
I use tofu - something of a veggie superfood. It's quite bland on it's own but is good at absorbing flavours. I tend to use firm tofu as it's better at retaining it's shape. You'll need to squeeze out all the water. I cube it and then fry it before adding to stir fries (mushrooms, bean sprouts, mange tout, carrots, noodles etc, etc) with 5 spice, smoked paprika and soy sauce. It also comes smoked which is very nice and as marinated strips. Silken tofu is much softer and can be used in desserts. If you have a Chinese supermarket nearby you can usually pick it up cheaper than normal supermarket prices. There's also tempeh which is fermented soya beans and comes in a block. This has more of a flavour to it and can be bought from health food shops in the freezer. I make a vegan 'chicken' style filling for wholemeal pitta breads with tempeh, red onion, red pepper, celery, salt and pepper, lemon juice, vegan mayo and mustard.
Being in China, I eat a lot of tofu in different shapes, sizes, formats and flavours.
I have absolutely no idea how they prepare it but they do it in many different ways and it is astaple.
The fresher it is the better obviously and certain areas tofu are eagerly sort after.
I need to seriously get into this when I get back to the UK in the summer.
Wrap a sheet around some mince, beef, pork, turkey and chicken for example or even vegetables and steam it.
You have an alternative for something like a sausage roll

Here is a recipe for Mapo Tofu. This is a wonderful dish and I eat it at every opportunity I can get. A little complicated but really is more than well worth the effort.
Everything will be available at a Chinese supermarket, there are many in the UK or online. They may even ship the ingredients to you.
It is extremely popular here and I cannot even begin to describe how fabulous it is. SIchuan cuisine is spicy but you can control the degree of spiciness.

Thanks guys! I found a few good looking recipes online last night for both savoury and sweet dishes that I would LOVE to try out! Unfortunately there are no Chinese supermarkets near me but its available at the likes of Tesco so will have a look and see if my local stocks it (or rather Bruce will when he's in today haha) xx
