I quite like home made soup but now worry about the carbs in chunky veg soup. Anybody have a favourite low carb recipe ?
 
I do a green veg one that tastes great and doesn't upset my numbers. Basically it's just stock and any green veg you happen to fancy. Mine usually has peas, edamame, broccoli, leeks, onions, herbs (whatever looks good) and cabbage. Or perhaps lentil soup would do it for you? Tomato and basil? I find I'm OK with most things as long as there's no spuds in it.

I make a home made veg soup with various root vegetables and soup mix(pulses etc). Doesn't mess with my BS .
 
Me too. Had a chunky veg soup a couple of days ago made with some root veg. My BS barely moved.
 
Garlic & Leek With extra Leek & Garlic :D you make it to suit yourself
 
I was wrong. The soup my wife made didn't have many root veg in at all, so it might suit you. Mange tout, leek, celery, squash, garlic, onions, tiny amount of sweet potato, broad beans, soya beans, peas, baby corn, spoonful of quinoa, spoonful of chia seeds & herbs & seasoning.
 
That sounds lovely Mark! - only trouble is I'd want about half a French stick hacked up with half a lb of butter spread on it, to dip in that!

Despite being able to shoot in as much insulin as I'd need for it in theory - it doesn't quite work like that in Real Life!
 
Yep that's the problem the thought of the french stick. I was only thinking of having a small amount as a starter as I'm always looking for food after dinner. My nurse says it's the diabetes driving hunger.
