I may not be a great cook but I enjoy this salad every day.

It is spinach (lasts well in the fridge) cucumber, spring onion, tomatoes, celery, sugar snap peas, Morrisons Best feta cheese, olives, walnuts/pecans, olive oil and a cheeky dollop of mayonnaise.
Salads can be boring but the feta and olives give it a bit of flavour. I have eaten this for 3 years at least. My BG hardly moves.
Served with a pint of tap water.

Looks lovely but I am not sure I could eat the same thing more than 2 days running let alone 3 years!
Yet another way we are all different.
Glad you have found something you enjoy and doesn't upset our diabetes.
 
Looks good, but I like variety!

I make a salad with Feta and Avocado.

Although today Subway supplied my salad.
 
Wow, looks great and I like everything on the plate, so would happily eat it. I love a good salad and often mix and match the ingredients to give them a bit of variety. Only thing I would maybe change is to not have both the olive oil and the mayo. I would only have one of the two. Often add boiled eggs, or tuna, or coleslaw to a salad.
 
I like my salads dressed with balsamic vinegar or lemon juice to give them a bit of bite but otherwise a big thumbs up from me. The only problem is that I struggle to fancy a salad at this time of year..... at least until I put the heating on and I am trying to get through to Nov without it.
 
Have you tried feta stuffed pepperdews, make a good addition to salad. I tended to take the dressing separately as otherwise any leaves were a bit limp. But looks fab.
I was renowned for my 'weed' salad as it had all sorts of home grown salad leaves in it.

I don't have much space for growing veg but have grown salad leaves (aren't they easy?) and always have some herbs. I love adding fresh herb leaves to a salad to bring out another flavour such as mint (very easy to grow), oregano (or marjoram because they taste similar), tarragon (a nice aniseedy flavour), basil and coriander (although the latter two don't last through the year).
I may also be tempted to finally chop a fresh chilli (or one I harvested during the year and stored in my freezer). I currently have an amazing chilli plant - the fruit are small but perfectly spiced. It is amazing because it is two years old and still has flowers.

The nasturtiums and rocket just self seed themselves everywhere in the polytunnel, fennel leaves are good. I sowed some coriander seeds in August and they have done really well, hopefully they will survive a bit longer.
 
I sometimes add a boiled egg but often have eggs for breakfast. Herbs would be an improvement but I make this at 6.30 every workday so I am maybe not at my most creative! Now you mention it I may buy some chives/mint or substitute a herb salad for the spinach. I have grown to love baby spinach but hate steamed spinach.

I appreciate the mayo is a bit naughty but without it I feel I am missing out. This is basically a salad I can make with my eyes shut. It can be improved if I had the time or the inclination.

I have had it with tuna which is great. Coleslaw I belive has 2 teaspoons of sugar in it if ready made. I would like the raw coleslaw though.
 
Looks delicious except I am not keen on raw celery. Would possibly substitute it with coleslaw made with a mix of grated celeriac and cabbage. I usually make my own vinegarette dressing without sugar. Also swap out the green olives and feta with black olives and mozzarella just to ring the changes. Making me feel hungry now. Worked up an appetite by shifting a large pile of conifer hedge clippings into a corner ready for shredding. I only have short arms so several armfuls and plenty of steps required. Who needs a gym?

Very nice! I'd leave out the spinach though: too many memories of school dinners 🙄.

Not too fond memories of overcooked soggy veg for school dinners. Like my veggies raw or lightly cooked now.

It's just olives I can't bear the taste of - goodness knows I've tried to like em so many times over the years. Just vile to me. OTOH not as bad as one of our granddaughters - olives and olive oil give her pretty instant, life threatening anaphylaxis though pronto administration of her epipen just renders her unconcscious for a couple of hours, not dead.

I don't remember ever having curry at school - and "wilted" just meant how I felt after rugby.
