I haven't tried this yet as I only just thought it up, so if any of you get to it before I do, let me know if you liked it.

Ingredients: For the oranges.

Juice of an orange
A shot of Grand Marnier
2 tbspns sugar or honey
1 orange for every two people (peeled and deseeded and with all the white stuff removed) You could use Clementines or Mandarins instead.

Put the juice, sugar and Grand Marnier in a sauce pan and bring to a fast boil till the sugar has melted, turn to a slow simmer and add the orange segments. Simmer gently for about five minutes then remove from the heat and allow to cool completely. Remove the fruit from the syrup and drain well.

For the chocolate: (The following should be enough for two oranges)

1 bar of good quality dark chocolate (Green and Blacks, Lindt or Lidl's Amazonas)
1 tbspn of the syrup

Cover a large baking tray with greaseproof paper and place the orange segments on it so they are at least two inches apart. Place a saucepan of water on the hob and bring to a simmer. Break up the bar of chocolate and place in a heatproof bowl over the pan, add in the syrup and stir gently till it's melted. Carefully spoon some of the chocolate over each segment and place in the fridge to set. Once it's set, turn the segments over, don't hang about or the chocolate will melt. Repeat so that the segments are completely covered. Store in the fridge till required.

Me too, diabetic hell. But then, I rarely cook for myself.
