could anyone tell me what I can use instead of sugar in cakes
and yes I no we shouldn't eat cakes but now and again would be nice 😉
I got told I could use coconut flour or almond flour instead of flour.

Coconut flour is disgusting according to my taste buds :(
I tend to use splenda for a sweetener, do remember though to add some liquid to the recipe 🙂
 
i've used Splenda and Canderel yellow and the supermarket equivalents (10g sweetener=100g sugar as a replacement). However sweetener doesn't caramelize so the end result is not the same. I've not tried flour substitutes.
i've given up and just have smaller slices. I've just made a chocolate cake this evening in fact (Nigella's recipe) (200g flour, 200g sugar equates to about 350g carb per cake, divide into 10 slices is 35g per portion , or 2 slices bread).
you could substitute half the sugar with splenda (100g sugar, 10g splenda) reducing the carbs per portion to 28g)
Rather than buttercream/icing though I use whipped double cream with , in this case coffee and vanilla flavoring.
Have a look at the Splenda or Canderel websites for recipes.
