I don't have an icecream maker and would love to know of a good recipe for icecream that could be made without one. I have tried frozen fruit and cream, but if left in freezer it goes too hard to scoop, and don't have the patience to wait for it to thaw lol. Or better still, find a company/shop in UK that sells some.

I have made an 'ice cream' with frozen berries and mascarpone, you can add a bit of sweetener if you need to, which you blend and eat immediately. If you freeze it it will be hard and need some thawing but you can do it in the microwave for a few seconds.
 
The trouble with ice cream is you need sugar in it to prevent ice crystals forming, otherwise you will get a solid frozen lump. Try some alternatives like frozen yogurt, Sainsbury do a coconut one at 9% carbs. I quite like Arla skyr which is thick and creamy at about 4% carbs. I haven't tried freezing it so can't tell you what happens.
