In brief, I suggest you Google for Dr Davide Unwin's diet sheet, Zoe Harcombe's What should we eat, and if not already mentioned the Freshwell low carb programme. The main thing is to focus on nutritious foods with plenty of protein and healthy fat plus vegetables. All things equal this will keep your husband well fed, lead to T2D remission and then to reversal of his fatty liver which will restore his liver and pancreatic functions to normal.

Please note many people gradually build up fat in their liver, and BG levels, over a decade or so before T2D breaks out. This seems to be the case with over 90% of the newly diagnosed. Waist measurement is usually a good indicator
JTR thank you. You may have hit the nail on the head here as just today we learnt what hubby's waist measurement is. A big shock! I have just noted not so long ago from another helpful member about Dr UNwin's diet sheet, and Zoe Harcombe's What Should We Eat, so good to see another recommendation, it sounds worthwhile looking at. Also, thanks for your encouraging words about remission. Good to hear, although it seems a long way off right now. But I've gained some tremendous help and pointers from every one here, which is tremendous.Thank you everyone.
 
Nature Valley PROTEIN bars, KIND, GRAZE, are some that are low carb. The bars do vary in size so do check that as well. Eat Natural is another one which is 14g per bar but it is a bigger bar so you could cut in half.

Hello Drummer, thanks for your reply. Hubby is in his early 70s too and he is going to try to go low carb. What are seed oils? And is a Tee2+ meter the same as a monitor for checking sugar? I'll take a look on Spirit Healthcare... all this is so new, and taking it all on board is not easy at first. Thanks for the tips for holidays, handy! I'm writing everyone's suggestions down in a notebook to keep for reference. Thank you.
The Spirit Healthcare Tee 2 + is the meter I got. I signed up on the website, they sent a confirming email and I could then buy the meter and strips free of VAT. It is now over 7 years old and still going strong. It is used to measure glucose in the blood - I suspect that other sugars are not detected, but at least it identifies the usual suspect....
Seed oil are sunflower, rapeseed, and the like.
Eating low carb has sorted out quite a few things for me - my weight has reduced, my thyroid has perked up and I am officially in remission - older people are not expected to get down into normal numbers as our blood cells are recycled at a slower rate, even if our glucose is in the normal range.
 
If people like walnuts - I once bought a (very small cos it cost A Lot of money) bottle of walnut oil when we were on holiday in France and used it cautiously with some red wine vinegar for salad dressing. OMG - utterly DE licious!
