Obviously the 3 wheat biscuits are more than the portion size advised for non-diabetic people so definitely not great for a diabetic. I think some people here get away with 1 Weetabix plus natural yogurt and berries.
I wasn't aware of the Mountain Joes but you have to learn to look at the total carb content of whatever you eat, not just the sugar
On the whole however, if does not seem that you are eating many carbs and I certainly don't think you can consider it gluttony having 2 apples and some cheese for lunch. It sounds like you are quite active with your job, so aside from some small tweaks to your diet like reducing the quantity of wheat biscuits and doing some testing and looking for a better option to replace the Mountain Joes (Maybe try the Nature Valley Protein Bars as they are just 10g carbs per bar. so that is a 50% reduction straight away, although personally I am not a fan of these highly processed and sweetened bars anymore, I don't think there is much room for improvement and you may need more medication.

Did you tell us what medication you are currently on? If so, apologies, I must have missed it.
I'm on metformin 500mg 2 tabs twice daily and 1 10mg dapagliflozin. I used to take gliclazide before the dapagliflozin but I did so well for a while that I was taken off it, if you can believe it. I'm 64 and started to gain weight at the age of 5. My whole life has been a struggle weight wise. But I keep trying. I'm 5' 2" 157.5 cm and currently weigh 12st 10lbs (80.74 kg) but at my heaviest many years ago, I went up to 18 stones(114kg). I've hovered around my current weight now for a few years. Sometimes I'm a bit less, but fortunately, never any heavier. I really don't think that I will ever make my ideal weight as, as I've said earlier. I am very greedy and seem to have almost zero resistance. I gave up smoking 20 years ago and alcohol 18 months ago. But never mastered the food addiction, and for me, food really is an addiction. I will however keep trying.
 
Well one question I'd like to ask is, why do you 'hardly ever' eat meat ? I mean, you like bacon at brekkie as well as eggs - so you aren't vegetarian. How about fish? Chicken? Other sources of protein? Vegetables? Nuts/seeds?

Just not as keen as I used to be. I don't mind chicken just once in a while but just the smell of meat, beef, lamb, pork, cooking puts me off. Not a lover of fish, but I eat crab sticks and crayfish and prawns. Love vegetables especially spinach and broccoli, oh and sprouts. I like walnuts and pecan but prefer salted nuts so tend not to buy very often as I'd eat too many.

I think like myself you like the carb fix. You will never get it from meat. It is never going to give that bite that texture the I want to eat this again. I know I was and could always be a carb junkie as I call it. It is the same as alcohol in a way. alcohol turns into sugar and gives you a buzz in the brain so you get addicted as you do carbs to sugar. I think someone has got a theory on this where it really kills the liver like alcohol and although you will not be over the limit to drive it has its side effects too. High Blood sugar is dangerous.
As others say you tried and just need to watch and tweak your diet and reap the reward. Salt is not sugar but it also does something bad maybe dehydrates us or gives the kidneys too much work. I am not saying you have a lot but no salted things.
You have got to see whats on the other side now you found out what's on the mountain. Good luck climbing back down.

Just remember no one here is perfect we all struggle and we are all behind you. either still struggling or in a good patch wishing everyone was feeling the same. We are all trying to support one another. This is a good forum.

Crab sticks tend to be crab flavoured and quite high in carbs, so real crab is a much better choice.
You might be cooking meat at too high a temperature - I have noticed the tendency to roast at settings high enough to sear the meat and it dries it out at the same time.
Back when I was working I would often just throw raw meat into the pressure cooker, add the contents of the stock jug and some hot water from the kettle then cook it on high pressure until I had chopped the vegetables, cool it off under the tap and then cook vegetables for 5 minutes selecting high or low depending on how tough they were. The smell is quite different from that of hot fat.

I wish there was chat rather than all on here. However last pennies worth and its the pot calling the kettle or other way but be kind to yourself. Do not beat yourself up, you get one life do enjoy it.
 
Thank you. I have ordered a monitor now. As for what I eat typically on my working day. Well its usually either poached eggs (2) and either air fried lean bacon or avocado, which i love. ( go on tell me it's a no no ) sometimes i have asdas own wheat biscuits, but being greedy, I've been having 3 with granulated no sugar sweetner, skimmed long life milk, maybe a few raspberries if i have some. I go to work and do 2 hours office cleaning, which is quite full on. Then after work i go food shopping, then come home to start my own housework. I'm up at 3am, then finish ready for lunch at about 12. (I had breakfast at 4.30 am) my evening meal varies but rarely includes meat. Last night I had broccoli steamed, then covered in cheese and tomatoes and baked in the airfryer with nas baked beans. I usually been craving something sweet at about 7pm so I've been having a low sugar mountain jos bar. I don't drink alcohol, or smoke.

Having such an early start means you want something quick and easy for breakfast so how about trying some full fat Greek yoghurt with some berries or nuts or seeds or with a small portion 15-20g of a low sugar granola. Your eggs and bacon or avocado are good options, if you are now testing you could see if you can tolerate a piece of toast.
There are lots of options for evening meals even if you don't want much meat, veg curry, stirfry, chilli, high meat content sausages.
The Freshwell link has some veggie meal menus but even in the others you can substitute tofu, halloumi, paneer for the meat.
Using an air fryer, I find the meat doesn't smell too much when cooking.

One of my favourite veg curry is butternut squash, cauliflower and chick pea which I either add paneer or boiled eggs.
 
Yes I too really enjoy a veggie curry and have a very nice recipe using cauliflower and halloumi but I also add chick peas and any other veggies that need using up including butternut squash and it is really tasty. I don't have it with rice or anything, but might serve it on a bed of shredded cabbage. Just recently I have been experimenting using sweetheart cabbage to make a sort of cabbage bhaji (curried cabbage) with onion and spices and tomato and garlic. I had it twice in a week for my evening meal and had leftovers for breakfast the next day 2 mornings I enjoyed it so much!

That sounds delicious. I have some low carb rice with no sugar also. I got it from holland and barrett but you can also get it off amazon. It smells a bit strange, sort of fishy. But if you wash it and use it with strong flavours it's not too bad. Of course it's not proper rice. Its plant based. But it is filling. I forgot all about it until you mentioned curry. I'm about to go to bed as I'm up at 3am. I'm actually looking forward to getting stuck in tomorrow and making new recipes. Thanks for the idea.

Yes, it will be Konjac rice is very low carb (try to think carbs rather than "sugar" as most rice would be considered low sugar because it simply doesn't contain sugar, it is just all starchy carbs). I have some and use it occasionally. It also comes in noodle form. The supermarket usually has the "Bare Naked" brand of it but I have got cheaper ones from B&M stores. You need to drain and rinse it thoroughly before you heat it as it is just the preservative liquid which smells funny.
