I don't know if this has been discussed, but I love stir fries and I have had a couple this week resulting in a lower Bg as my last test , this pleases me obviously and I wonder if anyone else has had such a result ! I have come down from a couple of 9 readings to 7 . I wonder also if it is because they fill me up more so I don't snack as much in the evening?
I include tofu pieces in them too as I am veggie and I get some protein that way .
 
Hi Ann, I eat quite a lot of stir fries, a pan full of veggies that's good for you & don't have noodles all the time. Good & cheap 😎
 
Stir Frys are great. My 11 year old son who is a fussy eater with regards to vegetables will eat absolutely anything in a stir fry :D easiest way to get lots of healthy stuff in to him 🙂 It is our favourite meal.
 
You can also totally decarb it by using sliced cabbage instead of rice or noodles - adds loads of bulk to the meal and if you're a fussy eater like me, the cabbage just absorbs all the other flavours.

As for having lower results - as a T1 it doesn't really apply to me, but I have noticed that dishes that contain a lot of sliced chillies in a thin sauce (ie a hot stir fry) need less insulin to cover than a dish with the equivalent amount of carbs.

Sadly it doesn't seem to apply to curry. But definitely when I do things like Thai fried rice, which I make with a lot of birds-eye chillies, I need less insulin.
 
I love stir fry but I hate cabbage, so I use shredded carrot instead of rice or noodles. I find they're really filling and also use carrots as a nibble between meals when I have the munchies.
 
I tend to have a pretty small jacket potato with my stir fry , and love veg so I am enjoying my new found favourite dish !!
 
Oh , and I put tofu pieces it too as I am a veggie 🙂
