Any idea how this works? I'd like to experiment with it in my gluten free cake recipes so both Big Sis and the GMNT can have cake, without having to make two cakes!

Hi Kate,
here's the splenda site http://www.splenda.co.uk/ there's a good baking tips section to look at as well.
Personally I find it's better to substitute 1/2 the quantity of sugar with the splenda equiv.
Things like cutting back on the flour and replacing with ground almonds also reduces the carb content.
