Had one of our favourite pre-diabetic meals (kind of a tuna stroganoff with celery - it's lovely honest) with soya spaghetti instead of regular. Could barely tell the difference - and that's only because it seems to need less cooking time and was a bit overdone. Well chuffed
 
Where do you get soya spaghetti from?
 
I'll check it out. Though must admit, haven't missed my spaghetti since going low carb.
 
Try courgette spaghetti or courgetti as they insist on calling it. You need a spiralizer but it's actually very nice tossed in garlic and olive oil or with a traditional sauce, plus you get some green veg in and it's cheaper than the soya spaghetti 🙂
 
Hmmm, soy spaghetti - did your BG spike hours later, Bob? I really miss pasta! And can anyone tell me if rice noodles take forever to digest, like regular pasta?🙄
 
No, no spikes. BG went up by about 2. Will definitely be buying it again.

I have too many gadgets already to make room for a spiraliser, but can to shorter courgetti with the wide feeder tube, and course grater blade on my processor. You can also do courgetti with a julienne peeler. It works extremely well on courgettes, but would probably struggle on squash or anything too much firmer. Similarly, you can do tagliatelli using a normal potato peeler.

It's amazing where the workarounds come from. 🙂
