I enjoy soup but rarely make it and either buy a carton or go local cafes that make it. Today i had cauliflower and broccoli but given the opportunity to have a cheese scone or bread with it didn't refuse! I've decided to try and be a bit stricter with myself as I still want to lose more weight. I have always liked Nigella Lawson and my copy of How to Eat is well thumbed. Today i saw a recipe for soup that looks interesting. There is no nutritional info and it is thickened with a potato but rest looks diabetic friendly. I like comments added to recipe which suggests roasting cauli and onion and adding a few other spices. I'm very fond of cumin which should compliment the turmeric.
Any experienced cooks or good carb counters have a view? I actually have a couple of Majorcan new potatoes i could use.
Nigella used to post a recipe a day on her twitter feed. This recipe was on her bluesky feed.

 
Thats one potato between 4 servings so it wont be that bad
 
Love soup, a wee tip, roast veggies first before adding to stock, roasting brings out a beautiful flavour in veg.

Make a pan of soup probably every other week, good nutritious meal.
 
If you don't have time to roast the veg, I always saute them in the pan I'm using with some butter. Not oil, or cheap marg. Made some broccoli / cauliflower añd blue cheese this morning as well as vegetable with lentil. If I have added potato or lentils or beans, anything that I know is carby, as I usually make 3 or 4 x 400 ml pots, I tend to guesstimate up to 20 carbs. But only have one bowl!!!!! And no bread or rolls.
 
I generally guestimate 20g carbs for a single bowl of soup on it's own too. If it has potato or lentils in it probably nearer 25-30g carbs.
 
I'm going to cheat a little. I used to cook enough for four but just cooking for me though may take a portion to my sisters and it will keep easily. I used my cauli before i saw the recipe but will be going to farmshop and fishmonger tomorrow. A few months ago I bought a soup maker in Lakeland. It was half price and was an impulse purchase( 32£) but suspect the bigger one which also sauté seems better. I have a small airfryer so will roast items in their. I'm having poached salmon avocado and watercress today. I have a very good head of garlic suitable for the recipe.

We got a soup maker as a gift for Christmas, tbh prefer to make it in a good size stock pot so switched it over for a coffee pod machine.

Years ago my sister bought one. I used to make good quantities of soup and use a stock pot but my freezer has failed. I bought the soup maker before Christmas on impulse as I was in Lakeland and it was half-price. I wouldn't have bought it at £64. When I eventually looked at it I realised the sauté function would have been good but I decided the exorbitant price for the big one wasn't worth it. A stick blender and stockpot were better. I have bought a cauli so may give it a go this weekend.
