Rally glad you are asking these questions Val, I am learning loads as well.
So keep asking.

I just eat oatcakes (Nairnshire 6g CHO / oatcake) but fewer than I did before, with more cheese on than before.
I am no expert on all this, so am just beginning to sort out my diet more. I had been told eat sensibly, match carbs to insulin. Then with a Libre I saw what my BG was doing.

Lots to learn so please keep asking.
 
You could try melba toasts if you wanted a cracker- 15g carbs per portion but a portion is 6 crackers! So a couple of those with a healthy helping of cheese is 5g, and should keep you going for a while.
 
Thanks SB and Annette. The melba toasts sound good and I think I will get a packet of those when I shop tomorrow. As you say I would probably only need a couple with plenty of cheese for a snack.
 
I often have a chunk of cheese washed down with a glass of no-added-sugar apple squash (and I make sure that the NAS squashes I buy are almost sugar-free). (Or I have it with an apple — Gala for preference, or failing that, Braeburn — but that's not so low-carb.) This is especially lovely with a strong smoked cheddar.
 
Thanks Robert, my favourite apples are granny smiths. Do you know if they are OK. I get a no added sugar lime juice cordial from Sainsbury's which looks fine.
 
I think Granny Smiths are about the same carb value as any other variety. The only problem I have with Granny Smiths is buying them unlabelled from one of those grab-n-go places; Granny Smiths (lovely) are visually indistinguishable (at least by me) from Golden Delicious (tasteless rubbish — they only reason they don't fall foul of the Trade Descriptions Act is that "Delicious" is a name, not a description).

[ETA:] Carbs & Cals has only one listing for "apple", presumably covering any variety. An 85g (about average size) apple is 10g carbs; a 131g apple is 15g carbs.
 
Thanks Robert. I get mine from Sainsbury's and they are clearly labelled. I agree Golden Delicious are utter rubbish.
 
I hate to break up the Granny Smith love, but i really like Gala. They are quite sweet so probably not the best for me.
