simple quick easy cook book?

hi, just been diagnosed with type 2. can anyone recommend a simple cook book? due to disability i can't stand too long cooking. i need simple, quick recipes using ingredients i can get from my local sainsburys. i don't want recipes that have 20 different ingredients or ingredients and utensils i've never heard of or take an hour to prepare and cook. simple, quick, easy. i've ordered carbs & cals very low cal which i hope will have a few i can manage. many thanks!

Welcome to the forum.
There is no real need to have a cook book as you can look on the internet for low carb recipes with whatever ingredient you have or the Freshwell Program has menu plans and recipes https://lowcarbfreshwell.com/
There are some good recipe books out there, the Diabetes weight loss cook book by Caldesi, the Keto Kitchen by Palmer, the Pinch of Nom Quick and Easy are all good.
The web site sugarfreelondoner has lots of easy recipes both sweet and savoury.
You should find Carbs and Cals helpful in making good choices but the shop website is a mine of information so you can choose before you get to the shop and don't have to peer at the back of the packet for the carbs in the nutritional information. Remember it is carbs you want not just the sugar. Focus on carbs not calories.
Things like cooked meats, tinned fish, eggs, cheese are always good standbys with salad and veg. Meals don't need to be complicated. Making more portions than you need and freezing for home made ready meals is a good idea.
 
Welcome coltaz. I find simplest is better than cookery books.

Simplest for me is buying the foods from the green and amber lists in the Freshwell Meal Planner from the supermarket. Then I do chopped salads (starters); stir fries, omelettes, roasts, tray bakes, air fries, grills, microwaved veg/eggs/porridge (mains); lettuce (for nutrients such as folates). My wife makes soup, gets and cooks fish, and provide berries and yoghurt.

From yesterday's paper a list of 14 basics for everyone to include in their weekly diets: bananas; oats; black tea; oranges; apples; mushrooms; yoghurt; olive oil; eggs; beans, peas and lentils; berries; dark 70%+ chocolate. Everything in moderation.

To go beyond I keep an eye open cookery books in charity shops. They come up with all sorts of inspiring recipes you would never think of. It's easy to adapt many of the recipes to the foods on the list. For example, Rose Elliot's Vegetarian Cookery for £2 at the weekend - a classic.

Other members will recommend recipes here on Diabetes UK and cookery books they like (a search of this forum will find many more).

I cook stews , soups etc on the hob using knorr stock pots ......easy , no faffing about

Omelettes

Stir fries ......bag of stir fry veg , chicken or beef or pork diced , supermarket stir fry sauce .....

Pan fried cod , salmon , in onions , pkt of lemon butter or parsley sauce , green beans or peas etc

Can't stand complicated recipes with lots of instructions ........get in in the pan or pot , cook it , eat it

The Micheal Mosely and Wife books are great for quick easy cooking
 
Sugar Free Londoner (see her website) also has some low carb/low sugar recipes too. Cheers
