So, I'm quite well known in my circle of friends for not being great in the kitchen. Since my partner's T2 diagnosis my cooking has had to change quite a lot! Well, it was approaching my partner's 50th birthday and I'd have normally bought a cake from the shop. This year though I knew I'd have to attempt to bake one..... And it was surprisingly a huge success. I can see baking becoming more of a frequent occurrence now.

Thank you, it was surprisingly good, and I say surprisingly only because I made it and not because of the unusual ingredients. It actually just tasted like a normal cake, my mum said she wouldn't have had a clue it was made with almond flour.
I kept it simple as it was my first attempt so it was only flavoured with vanilla extract. I can't wait to try the coffee and walnut cake that I saw on another post. I think I may have caught the baking bug!

I hope your partner appreciates you...that's real love baking a special cake!!! It looks wonderful and I'm tempted to try but I'm far too lazy.

I’m no expert but this is the recipe I used (I looked at several online and kind of made my own up from different sites!).

For a 2 tier 7 inch cake (as pictured above) I did the following:



Cake Ingredients:

6 large eggs

150g erythritol

1 ½ tsp vanilla extract

42.5g melted butter

288g almond flour

1 ½ tsp baking powder



Frosting Ingredients:

200g cream cheese

1 tsp vanilla extract

38g softened butter

75g powdered erythritol



Method:

Whisk eggs, erythritol, butter and vanilla until combined

Add flour and baking powder and whisk until mixed in (this literally all took less than 5 minutes).

Split mixture into two greased cake tins and bake on gas mark 4 until cooked (mine took about 35 minutes).

For the frosting, whip cream cheese and softened butter until smooth and fluffy. Add vanilla and erythritol and mix in.

Once cakes have cooled use the frosting in the middle of the two layers and to cover the cake. Decorate as desired.
Honestly, it was so easy and the final result was very impressive.


I’m not sure on the method for the walnut and coffee cake, the original poster said he adapted a recipe for almond flour chocolate chip muffins on Sugarfreelondoners website, and he swapped the chocolate chips for chopped walnuts and added in a splash of strong coffee. I haven’t had a chance to look at it myself yet. I hope to very soon though
 
Brilliant , our local church has a welcome party for the new Vicar . After 2 yrs of lockdown, covid and reduced services with no Vicar we want a big welcome . Im coordinator so I instigated some Vegan, and Lo carb cakes sandwiches along side some similar sandwiches. Your cake fits the bill perfectly AND its the first cake Ive baked in 21/2 yrs. Thank you

I am forever trying to tell people that keto recipe baking is actually easier to get great results with.
It was one of the revelations that turned my diabetes cooking journey into a joy.
Previous to diagnosis I hardly ever had sweet foods and my baking endeavours were awful.
Since diagnosis and using alternative keto ingredients my baking skills and breadmaking and pastry skills are constantly surprising me in a good way.
Your cakes look amazing and I know they taste wonderful too because I make similar recipes often - I am heavier handed with the vanilla though. Mine do not look so wonderful though because I am cooking for myself so I make small ones and tend not to make much of an effort to finish them beautifully.

Can I just ask, in the recipe above, does so much erythritol not cause a problem, it seems an awful lot as almond flour is already quite sweet.
I only put about a desert spoonful with 4 tablespoons of almond flour and 2 tablespoons of low sugar granola.

I find that 'normal' levels of sweetening are far too high for me after over 5 years of low carbing - I usually reduce any sweetener to 1/4 or 1/5th of the advised amount - and once or twice I have forgotten to dig out the sweetener from the back of the cupboard and only realised a lot later when going back to do a followup on the recipe - I print them out and tick off each ingredient and stage in the process, then see that there are ticks missing.

I can't say that I have found them overly sweet, and I don't consider myself to have a sweet tooth. However, I have not made this recipe with the frosting since I posted this. I now just make the basic sponge and usually add some blueberries. I might well experiment with using less though.

It is just than erythritol can cause stomach issues so I'm careful not to use too much.

Since I started eating following a keto regime I have been eating massive amounts of fibre and I eat them daily and I have been eating that way for years now. I think like many things one can become adjusted to things like erythritol and high fibre and in my experience I no longer have any digestive discomfort from erythritol which is in any case one of the least likely to cause discomfort. Also I think from the recipe the amount of erythritol which will be eaten per portion it isn't very high. I wouldn't think a slice of cake would cause any issues. If you ate a lot of it then maybe things would be different.

I've not worked it out properly, but at a rough (generous) guess I would say about 6-8g. If I get a chance I will try to work it out more accurately.

Thanks I labelled the cake as vanilla under 10g carb. The event was a success as well as ordinary cake , we had Vegan, Gluten free, and Low Carb for 100 people. Each slice labelled individually on trays . Seemed to be a success. Ive never done anything like that before . Certainly never for the Bishop, clergy, MP and visitors from Essex !!
 
Are there other types of flour which are suitable for cakes, or pastry. Im not a baker but I would like to try a few more bakery items now !!! Got the bug. Im going to an event on Monday , there may be buffet so I'll need to take something for myself probably. Cakes / caster sugar dont do my levels any good o_O
