Please excuse my ignorance, but are they used to check for protein in the urine?. I’ve not heard of them before.

No, Ketostix test for ketones. When you have diabetes - especially (but not only) Type 1 - high levels of ketones can be dangerous.

There are differnt type of urine testing strips, some test for multiple things and some for only one or two things. The Multiple ones are more expensive.
