Hi Inka, I really dont like veggies so any ideas you can offer will be greatly recieved
A stir fry is a good way to get veggies in - carrots sliced into thin batons, pak choi, red or yellow pepper, chestnut mushrooms, courgettes, etc. Add flavour with fresh ginger, toasted sesame oil, soy sauce or a bought sauce that’s not too high in carbs.
Explore salads too - don’t just have the usual lettuce, tomato, cucumber. You can make salads out of kale, raw broccoli, rocket, watercress, and add protein of your choice, a few fruits eg strawberries and blueberries (yes in a savoury salad - they’re delicious), and top with nuts and/or seeds plus a homemade dressing. Raw fennel and orange makes a lovely salad, as does raw beetroot grated with apple and walnuts added.
Roasting veg is another way to make it different. There’s the obvious Mediterranean veg roast with courgettes, peppers, cherry tomatoes, garlic, red onion, but you can also roasted cauliflower flavoured with spices like turmeric and cumin.
I really love the huge variety of veg. There are so many different kinds and so many possible combinations. I don’t have time to type in recipes today but Darin Olien has a tasty roasted cauliflower recipe and some nice and different salads using many of the ingredients I’ve mentioned above (they’re on his free 121 Tribe app), the Forks Over Knives website has some free recipes, and many vegan or plant-based cookbooks have good recipes. You can always add meat or fish to them as a ‘side’ if you want.
