have you tried something like mangetoute? They are absolutely nothing like cabbage broccoli or cauliflower 🙂
I'm not big on a lot of veg, but something like mangetout together with peppers mushroom and chicken lends itself well to a quick stir fry.
You could always throw in some thin sliced carrot and some peas too
 
However the OP is taking gliclazide quite a high dose so it would be risky not to have any carbs.
I wasn't suggesting no carbs - just pointing out that the reaction of blood glucose levels to a high carb food tends to be fairly significant.
Having tried the Lidl protein rolls recently, I seem to be better off avoiding any commercially made bread and eating my normal diet
I think with Gliclazide the advice is to spread the carbs evenly throughout the day not missing meals, after taking the tablet first thing.
