This week I got some rhubarb from a friends allotment so decided to make this rhubarb cake.
It says 2.9 g carbs per slice for 12 slices. Mine will be slightly higher as I like larger slices .
Keep it away from me!
(I was fed too much stewed rhubarb, and rhubarb pie as a child, I've not touched it since leaving home- that aversion runs deep 😱)
Hi Martin. Your cake looks delicious. Could you share the recipe please. We grow our own rhubarb. I usually add ginger and cinnamon to mine to reduce the sweetening required. Haven't tried it since diagnosis so very interested in low carb/low sugar options

I make my crumble topping with almond flour/ground almonds. keto granola, extra seeds (pumpkin and sunflower) and butter. I don't need to add any sugar or sweetener to the topping but if rhubarb I add some sweetener but other fruit generally don't need any.

Only saw rhubarb in Waitrose this year and unsurprisingly it was silly expensive so have missed out so far this year. Do have a couple of Kg's of Bramley apples so I'll see what I can do with them.

There is a recipe for an apple cake on sugarfreelondoner.com which is very similar to the rhubarb one , and there are lots of recipes on line for keto / low carb / sugar free apple crumble.
