1 A whole week of finger pricks plus food list first time. IS it important to do finger test exactly 2 hrs after (starting?) a meal or can there there be slight variable?
2 As its not proven i am type 2 , possibly LADA , type 1.5.:- during the weeks tests should i do a few days lowish carb and then a few days higher carb with foods I suspect as issues pop in @ times through the week
 
In answer to your first question, my thought would be that it is not vital to keep to 2 hours but it is sensible to try and get as close to it as you can. My gut instinct is that ten minutes either way will not be significant.

When it comes to what you eat, I would eat normally and see what the results tell you. Unless you have a very rigid regime, the variations in what you eat normally should be good enough to start to see any patterns.

The more important thing is to keep good records of what you eat and the blood glucose measurements.

PS, don't forget to include drinks and snacks in your diary. No need to do the before and after test for them, but having that information available could help you to understand what is going on.
