My mothers insulin doesn't work that way, she is type II and has one dose in the morning
Also I want to keep her sugar free to avoid anymore retina damage which has been stable for the years I have been caring for her.
Remember, though, that something high in starch is just going to turn to glucose in the blood - you could allow some sugar if you are reducing starch in the diet.
Adding yoghurt or cream to jelly might help, just because it would be new and unfamiliar.

Do the jelly with cream and tell her it's 'Grown-up junket'

When I worked for Allied Lyons they had an old fashioned dessert called 'table creams' - the maple and walnut flavour was lovely. They were a mix of jelly and blancmange. People used to contact the factory - the old Symington's in Market Harborough, and ask for a box of mixed flavours to be sent to them - quite a few were abroad.
As I knew that it wasn't wise for me to be eating starchy foods, so I used milk, cream or yoghurt, and have used the same idea ever since.

It's the crystal one you add boiling water to, that I envisaged using, waiting until it had cooled and started setting, then beating cream into and back in the fridge to carry on setting. Probably best to add less water than it says on the packet.
