If you are borderline it might be far easier to remove some high carb things from your diet entirely rather than eliminate all carbs at intervals.
Eating low carb is really effective even for full blown type 2s so the changes you need could be relatively small, but being consistent seems to be a big help.

I've recently been diagnosed as borderline diabetes and am struggling with the diet. If I cut out carbs twice a week and cut back on others will that be enough?
Not really, better to follow doctors' advice and go for a 7 day a week low carb diet. Here is a link Dr David Unwin's diet sheet, and here is a link to him explaining why it's a good idea: The nuts & bolts of drug free T2 diabetes remission by Dr David Unwin.

By the way it's also good idea, if you can, to take the opportunity to get your liver back to normal. A pound to a penny you have a fatty liver and a fatty pancreas. These are things to reverse to avoid nasty complications. Dr Unwin's diet will put them right and keep them there. Aim to get your HbA1c down into the 30s.

Welcome to the forum.
Good luck.

Here’s your thread from yesterday @Gannett

Why not just reduce the carbs you eat each day?

Have a read through the suggestions from the thread you posted yesterday (inka just linked it in their post).
With a HbA1c of 47 it may be less stressful for you to start by focusing on looking at total carb numbers and eat smaller portions of anything with higher numbers.
You will soon get to know what to eat less of. Once you have made initial changes you can look at further changes.
I think this approach may be helpful as trying to change everything immediately can be overwhelming.

Some items high in carbs which are better to have smaller portions of are: cereals, potatoes, bread, pasta, rice, and anything with flour in (cakes, biscuits, pastries)
(new / baby potatoes have less carbs than other types of potato)

You are quite close to that threshold of a diabetic diagnosis so don't be too complacent that you don't need to put some effort in reducing that number.
A more consistent approach to reducing carbs is much better that yoyo eating from day to day. Have a look at this link for some pointers to an approach that will need to become a new way of eating. https://lowcarbfreshwell.com/
No reason why you cannot have filling tasty meals whilst keeping carbs to no more than 130g carbs per day.
