Hi,

We eat alot of picnics particularly in the summer. We have children and it makes days out cheaper. I take salads or vegetable soup for me for a low carb option.
We are going on a week holiday soon with family. Just wondering if anyone had other ideas that are low carb? We will have a fridge but with more people space will be at a premium. Don't want to be buying salad all the time.
We are likely to have picnics 5-6 days in the week.

Cooked meats, cooked salmon, high meat content sausages, cheese, coleslaw, hummus and veg sticks, hard boiled eggs, low carb muffins (recipes on sugarfreelondoner website), crustless quiche, high protein yoghurts, mousses or Kvarg deserts.

But take care with @Leadinglights suggestion of hummus. Chickpeas contain carbs. The odd thing is that some people do not digest them fully but you need to test to find out if they raise your BG or not.
 
Yes, I have to be careful with hummus as I am one of those people who extract more carbs from peas, beans and lentils than they are supposed to contain. I think it perhaps comes down to how capable your digestive system is at breaking down some of the fibre they contain.

I like olives with feta or Manchego cheese, but I know olives are a bit of a "Marmite" food.
I love feta stuffed peppadew peppers.... Lidl and Aldi both sell them in the chilled counter with the olives. Only get the red ones as the green elongated ones are naff. They are sweet and creamy but with a spicy kick but no added sugar just the sweetness of the little peppers.
How about a barbeque one day instead of a picnic. Do veggie kebabs (mixed onion mushrooms peppers courgette etc ) brushed with balsamic vinegar and olive oil) and have with whatever meat you like and perhaps coleslaw.
Tuna and mayonnaise made into wraps with lettuce leaves with cucumber and tomatoes.
Scotch eggs.... yes there is some carbs in the breadcrumbs but still pretty low carb if you just have one and very filling with all that protein.

If you look at what would be a portion of hummus, about a quarter of a pot (50g) then that would only be about 6g carbs which in the context of a low carb diet of 130g per day would not be a huge amount.

I will eat more than a quarter of a pot. If it is there, I can eat a whole pot. The Sabra hummus, which I eat, contains 18g and, just like @rebrascora , it affects me more than a "typical" 18g carbs.
As I mentioned previously, it is something to test how it affects you. Sounds like you are lucky and are able to eat it without any problem but, as is often written on the forum: "we are all different".

That is were the problem lies for many people. portion control. If they can't then better not to have.

What are you suggesting? Are you saying I have problem with portion control and should not eat hummus for that reason.
Dunking fresh vegetables (carrots, cucumber, peppers, etc.) into a pot of hummus for my lunch is not a problem.
I can afford it, my HBA1c is lower than the cut off for type 2 and I am not overweight.
