For those of you who have never heard of it, pho is a Vietnamese soup consisting of bone broth, rice noodles thinly sliced meat & herbs.... Quite delicious.....

Never had it before but on the way home from camping & still chilled to the bone we stopped into a Pho House & despite being apprehensive about the rice noodles I decided to give it a try.... It warmed me up & to my surprise my numbers were about 8.0 2 hours later. We went again on Sunday and my numbers were about 8.0 2 hours later & 5.3 3 hours later (should have taken BG after 1 hour to see if there was a massive quick spike, perhaps next time)
 
I ruddy love pho - has a minimal impact on my BG too.

The only downside is unless you have hours to kill and are a chef, it's impossible to make at home yourself. I tried to make quick broth using a recipe I found online (essentially, stock cubes and aromatic herbs boiled up) and it was awful. Turns out sticking a cinnamon stick in Oxo water is just as disgusting as it sounds and makes your whole house smell weirdly like dog biscuits.

There is nothing like a good bone broth, I save up all my bones (sorry dogs) & make a batch a few times a year..... I throw it in the slow cooker for a couple of days......
 
More on Pho...... Had some yesterday and......

FBG 6.7..... OK we had some friends round for dinner & poker on Saturday night.... More carbs & alcohol consumed than a typical Saturday night.

Which explains the odd feelings I had after lunch both times I have had this food. FYI, my body will readily tell me if I have had too many carbs even without testing so I suspected there was more happening with last weeks story than the meter told me.

Not entirely unexpected as I was concerned about what happened to my BG last week but does demonstrate:
  • The importance of testing
  • Massive spikes can occur very soon after eating, the quicker & larger the spike then the quicker normality is restored (not necessarily a good thing)
Now, for my next trick I will need to explain to the Vietnamese owners (whos English is a little challenged) that I want the big bowl of soup but half a portion of noodles.
