Pasta salad spike after 2 hours

Well, different results yesterday - took the whole bolus 30 minutes after having the pasta salad. This time I got a spike, which admittedly did drop fast so the timing of the bolus was still right. Interesting last time I didn’t get a spike, but then I remembered that the salads were different - the one that didn’t give a spike was a tuna and sweetcorn pasta salad which had some vinegar in it and I seem to remember reading somewhere that vinegar and similar such dressings, can slow the digestion and conversion of food into glucose?

My conclusion is that there really are too many factors that the best we can ever do is approximate and guess to achieve a reasonable overall result.
