Ive got a real taste for omlettes at the minute been to the shops bought some ham grated cheese and a leek , all i feel nervous about is flipping the omlette over anyone got any good tip for omlette making, do i use oil and butter or just oil etc etc
 
I don't flip my omelettes, just cook one side then fold them in half - they should continue cooking on the inside 🙂 Some people cook the upper side by popping the pan under the grill for a few seconds 🙂
 
A easy / safe way to turn omelette is to use a plate slightly smaller than frying pan, turn upside down, then slide back into pan.

Oil or butter - really it's whateve you prefer, but vegetable / rape seed oil is better than olive oil due to high temperature.

I used to flip/turn over - but the chef at my work showed me the grill trick. So I grill the top now too 🙂

I love ommelettes but tend to have phases eating them.

I make them with low fat cr?me fra?che (4%) and cook them in low fat marg or a little butter, cover with a lid until cokked then brown them under the grill for a minute. They usually rise to twice the size but you have to serve them immediately because they can deflate very quickly.

I tend to make them all with some grated cheese.
Our favourites are ham.
Smoked salmon.
Courgette and a little finely chopped onion.
Mushroom and leek.
Mushroom and bacon pieces

I often add a tblspn. low fat cream cheese with herbs and garlic. It goes brilliant with the smoked salmon.

Finely sliced peppers go nicely in there too. Got into that in Tunisia a couple of years ago. Could have them freshly made in front of you in our hotel. We used to go for everything on offer, ham, onions, peppers (red and green) and grated cheese - drool, drool!!

Now......what to have for breakfast this morning!
 
I use another 'Delia' method.

Firstly, pour some oil in a frying pan that's about the size you want the omelette to be.

Then, get the oil as hot as you possibly can, and ensure you circulate it around so that the edges of the pan have an oil coating.

Add your whisked-up omelette mix.

Now here's the trick. Once the eggs hit the pan, they start cooking. Holding onto the pan handle, get a tablespoon in your other hand. Hold it by the left edge of the omelette and tilt the pan towards your left. The liquid part of the the mix runs down to fill the space while the spoon holds the cooking part in place. Repeat for the right hand side and just keep doing this in any direction. The result is you end up with a perfectly circular omelette with a a cooked top, and because you've been gently moving the mix around, the bottom isn't burnt.

Then usually on one half I'll add some grated cheese and maybe some cooked bacon or ham. Use a fish slice to fold the omelette into a perfect half-moon and then lift out of the pan and serve.

Perfect shape, perfectly cooked through, not a single burn. By doing this, you can cook an omelette in less than 2 minutes.
 
Wow I love all this , im gonna take the bits into work 2moz and make myself one at work, im having this one with mushrooms peppers and onion.
 
Enjoy it Steff. I often have one with mushrooms, placed inside a toasted pitta for lunch, soooooo filling and tasty.
