Hi all,
I’ve just been diagnosed type 2 (HBA1C 55) and looking for all the info I can get as a vegan. My ex husband was type 1 so a fair bit of knowledge but he seemed to live on eggs and light meats which obviously I can’t do

Welcome to the forum, you are not very far into the diabetic zone so some dietary changes should go a long way to reducing it. It may be a bit harder and need more planning as you are vegan but still very possible.
It is all carbohydrates that convert to glucose so it is those you need to reduce and make some substitutions for lower carb alternatives.
Most of the meal plans certainly are not focused on a vegan diet but if you search for low carb vegan recipes and foods you can likely put together a good meal plan moving forward.

Type 1 and Type 2 are very different conditions and require a different treatment plan.
 
Welcome @Emylou46 🙂 If you’re vegan, take a look at Forks Over Knives. There are loads of recipes and Type 2 diabetes stories, eg:


Eating a very low fat vegan diet can improve insulin sensitivity. It did for me and I’m already very insulin sensitive (I’m Type 1). It can also help with weight loss, high cholesterol and hypertension.

There are plenty of things you can eat as a vegan so don’t worry.

You might also want to explore other plant-based books/sites such as those by Joel Fuhrman, Neal Barnard and Cyrus Khambatta (Mastering Diabetes).
 
@Emylou46 welcome to the forum. The graphics on the Freshwell site/app are useful. I have used various products from Holland and Barrett to replace pasta one is edamame noodles. I am not vegan but assume they are.
Kate Caldesi has written some cookbooks with recipes for diabetics. Her husband an Italian chef with restaurants in London and Berkshire was diagnosed with type 2. He has lost weight and in remission. Many of the recipes are quite low carb and use meat fish and dairy, however you may find some you can use or adapt and she has some good ideas and strategies.

If you click on the lines top right there is a side bar which further down has recipes. There are salads and sides but also vegetarian and vegan

Hi @Emylou46 and welcome to the forum.
You have had some good pointers on the diet front, but as a T2 you also need to consider exercise and weight in conjunction with the diet.
As has already been mentioned an hba1c of 55 is not that far into the diabetic zone , so some small changes in lifestyle is all that may be required.

I assume that you have not been put on any medication just yet, but will be tested again in 3 months or so to confirm diagnosis and to see if any lifestyle changes that you have adopted are working.

Ask as many questions as you wish and we will be more than happy to try and answer them.
