newly diagnosed type 2 & wd love some advice

I have found that GI and GL just do not apply - I digest things too well.
The carb count is the key - and making things yourself removing the carbs - I make real custard, no sugar, almond sponge also without sugar.
I have a small notebook in which I list low carb foods and the typical carb content, which seems to be a good resource.
You have real custard!! I've been looking everywhere for a recipe book with puddings that might work for me and my family which would ideally be no sugar without using fake sugar, ie they don't need to taste sweet. But I don't seem to be able to eat fruit anymore (testing with Libre). I can't have even a teaspoon of cooking apple puree so healthy nutty crumbles are out for example. Did you invent your own recipes?
Maybe its possible to exist on protein and veg alone?

custard is just eggs and cream, diluted a little with plain water if required, so it will pour, or allowed to set solid. I just put a bowl over hot water or use short bursts of microwave between whisking. You can flavour it with ordinary cooking flavours, and colour it too - I do pink, mostly.
It will also freeze to make ice cream.
I have found that the more I stick to low carb day to day the less impact a little more carbs has. These days I can have an icecream if I am out for the day in high summer - but I don't push my luck.
