Wow!! You are already doing brilliantly. Carb counting will definitely make things easier. His bloods are now either 6.5 or 5.1 or around these readings when he tests it just before his meal (plus he has his correction dose of its over....).... So if he's about that each time he has a meal do we even check other times?? Won't his bloods be high between meals but it just needs to be right at his meal time?.... Are we right in thinking we don't even need to check it between meals now and this is the goal we should be aiming for...... A 4-7 JUST BEFORE YOUR NEXT MEAL?
As Northerner has said, just checking before meals, before bed and if he feels like he is going hypo is fine for a start. There is a lot to deal with and it is all new at the moment. You can start to look at which foods cause spikes after meal later on.
Keep things going step by step, remember just how well you are doing already and keep asking on here if you have any questions. We are very happy to help.
Keep up the good work together.
