The two hour point isn't for a max, it's the point where BG should generally be back to normal (4-7). The max is normally around an hour.

Don't want to sound dim but what other things would I be picking effects up from besides food?

I assume you are speaking hypothetically regarding the jacket potato. I haven't had one but if I was going to have one then I would scan before and 2hrs after.

Because of the cost I may only test once a month or every other month. The cost of my gym and swim memberships would cover the cost of one sensor a month if I chose to cancel them.

My reason for testing albeit by scanning is to keep an eye on my bs so I can make changes if needed to ensure my bs remain within range through the day.
The sort of things that can affect blood glucose are how hydrated you are, if you are unwell, stress, your level of activity, somebody came up with a list of 42 reasons that could affect blood glucose levels.

Of course. Well stress has certainly had an effect on my bs the last 12+ months. Hopefully things will start to improve.
 
No Way Pedro does anyone's BG get back to normal 2 hours after starting eating. (doesn't matter whether they have diabetes or not, that's people generally) The time BG is at its highest after eating also varies between people and what they ate. 2 hrs is merely an average. eg the Pizza Effect. For me personally - peak for that is at approx 5 hours.
 
That's why I said 'generally'.
