Hello. I've just been diagnosed as diabetes2. I am 76 years old, bright, active and a graphite artist. I think I've sorted out my low carb diet, but am a bit confused about the pasta, rice and potato amounts. I am vegan. I have been measuring 1 cupful. Is that correct......
It’s a case trial and error and working out by testing what portion sizes you can tolerate. What I personally would advise is that you should avoid white rice and pasta and go for brown rice and wholemeal pasta. Potatoes can be a real problem, especially mashed. One tip I would suggest (it works for me and I believe for many others) is to prepare these foods in batches, bag into small portions and then freeze them. A quick boil from frozen is all it needs for a portion of rice or pasta. About four minutes at full power from frozen will cook mashed potato. I don’t really know the science behind it but I believe that freezing then reheating tends to slow down or decrease the release of carbs and can prevent big spikes in BG.
