Hi all in need of help don't like cooked veg so running out of ideas for meal

Welcome @Steph1976 🙂 Your veggies don’t have to be cooked if you prefer them raw. Here’s a recent thread with some tasty salad recipes that aren’t just lettuce and tomatoes:

That’s a tiny fraction of the recipes available out there.

Are there no veg at all you like cooked? What about stir fries? Or cheesy veggie bakes? Or veg in soup?
 
Hi @Steph1976 can you eat raw vegetables at all? I'm thinking of things like grated carrot or coleslaw? What about if the vegetables were blended into a soup, so a chicken soup with some leeks, a handful of frozen sweetcorn or mushrooms in?

Is it the texture of the cooked vegetables, or the taste that puts you off? My mother is of a generation where they cooked vegetables for a long time until they were well overcooked, and I didn't really like them growing up because of that. Since I started cooking for myself, I realised you don't have to boil frozen peas for 20 mins, and they actually taste nice, and aren't just soft balls of tasteless green mush.

@everydayupsanddowns - why on earth is the toolbar on any post I happen to post, pale grey, so I hence cannot add any Smilies? I've looked in my own profile to see whether I've clicked something accidentally and don't appear to have done so.

There are Type 2's in remission who only eat fish, meat, eggs and dairy. Strangely even though they appear to have no Vitamin C in their diet, they don't have any vitamin C deficiency even if they don't take supplements.

I suspect you have accidentally switched to ‘view source’ which shows the link codes etc, rather than the ‘rich text editor’.

There’s a vertical ‘…’ button at the right-hand end of the toolbar, and a ‘[ ]’ button beneath that to toggle between the two modes. Click that button and the RTE toolbar should light up again 🙂

True, raw liver has a good quality of vitamin C.
It's when you cook it it degrades and destroys it.

Is it the cooked veg you don't like, or all veg?
Search on YouTube for 'raw food diet'; there are several videos, but they might not all be suitable for diabetics. Check the recipes & their content, and see how it affects your BG if you try any
