Welcome to the forum, I believe there are a few people here who are gluten free with their diet. The only things which come to mind at the moment are black bean or edamame bean pasta which is gluten free and pretty low carb.
Also the Nature Valley Protein nut bars are low carb and gluten free.

How long is it since you had an HbA1C as that would give you a better idea of where you are now and how much work you need to do.
Doing some before and 2 hours after meals may help you identify some problem meals and foods if your increases are more than 3mmol/l or more than 8mmol/l 2 hours post meal. Peoples tolerance to carby foods can change with time.
