Were you told what your HbA1C result is as that will indicate how close to the top of the 'at risk' zone which is 42-47mmol/mol. So where you are depends on how much you need to do but it is likely some modest changes in diet by reducing your carbohydrate intake.
Cottage cheese is fine if you like it but all cheese is fine.

Vegetarian meals can be quite high carb as they often include rice, pulses and pasta but there are plenty of substitutions to reduce the cab content. I use edamame bean or black bean pasta instead of wheat based pasta as it is much lower carb. Meals based on cheese, eggs, nuts, dairy as well as veg, salads, and fruit like berries will still give you plenty of options.
