Are there good recommended bread cookbooks for diabetic people? Appreciate any ideas.

It very much depends on the type of diabetes and the individual I think.

For all people with diabetes, the macronutrient which most directly affects blood glucose levels is carbohydrate. But individuals respond to different amounts and types of carboydrate differently, and some people can tolerate more carbohydrate than others, or are able to eat more carbohydrate because they take 'replacement' insulin eg as treatment for T1.

So many people with diabetes opt for a moderate or low carbohydrate diet as part of their eating strategy.

Which may mean that they adapt or alter recipes (or simply avoid bread altogether).

bread is made from yeast, salt, water and flour. Flour is basically carbohydrate. sourdough bread is supposed to be better for Diabetics but can't say I've noticed any significant difference. I don't see how you can make diabetic bread. I am constantly making bread and make small rolls, this restricts the amount of carbs in my lunch, a loaf would probably result in 2 slices and twice the carbs. www.bakewithjack.co.uk is the best source on bread making techniques.
