In remission from Type 2
- Half a lower-carb high-protein wholemeal wrap
- A bit of ev olive oil sprinkled on the inside of the wrap
- Third of an avocado, sliced
- A few kalamata olives, torn up (don't use the pitted ones because they're icky)
- A few snow peas, chopped up roughly
- Some crumbled reduced-fat feta cheese

Fold everything into the wrap & stick it in a toaster iron or whatever for a minute.

Yummy; lots of varied flavours; simple as can be; can get a bit messy. Suitable for cooking incompetents. Certified Mediterranean, I suppose.

I count about 10 or so carbs, mainly from the wrap. To the minimal extent I understand these things, would appear to tick other macronutrient etc etc boxes.

Critique welcome!

Just what the hell is a 'toaster iron' ?

I did wonder if that's what you meant, cos the only cookery iron I possess is the waffle iron!

Or if you're looking for a slightly higher protein/lower fat version, ditch the feta and add smoked salmon or smoked trout. And serve unheated.

I wonder if I could build my entire eating-life around this. It would avoid having to learn how to cook properly, and with some marketing investment I could invent the "Eddy Mediterranean Wrap Diet" and go on TV.

The problem with discovering food that really agrees with you is that you tend to overdo it and it soon becomes boring. I remember discovering celeriac and thought it was the dog’s ********. I can hardly stomach it now without feeling ‘yuck’. I might try it again in a couple of years’ time. :(

Yeah, I know. Maybe it's an evolutionary thing to make sure you get a wide spread of nutrients?

Sounds lovely and something I'd like to try, eddy. Where did you get low carb wraps?

I'm in Oz - I've settled on these for the moment: http://www.mountainbread.com.au/breads/wheat/product-detail.aspx

They're thin, square wraps - I like thin. I use half a piece at a time: about 7g carbs, little fat, OK-ish on sodium, maybe a bit light on fibre.

It looks like they have some distribution in the UK: http://www.mountainbread.com.au/distribution/united-kingdom.aspx
