I eat loads of mushrooms and have never suffered any impact on sugars. Having said that, everyone with diabetes is different, but I've never encountered them being problematic on this forum.
I eat loads of mushrooms, pretty well zero carb, you need to have 120g for them to be 1g carb unless they are breaded in which case they will have carbs from the breadcrumbs.
They are very versatile, added to omelettes, with bacon, in curry, creamy mushrooms, added to casseroles, endless possibilities.
We are all different so it is important to test what the impact of different food is on your blood sugars.
That said, you can get some idea by looking at the carb content. Mushrooms contain little or no carbs so, typically, have little impact.
Mushrooms are great for protein and other nutrients and should not cause any carb-concerns.
On the other hand the taste & texture are both disgusting and mushrooms' popularity can be expalined only as the result of brain-washing by Big Fungus.
